"Tacos al Pastor" are a traditional Mexican dish made from thinly sliced pork marinated with guajillo chiles, achiote, pineapple, and warm spices. The meat is typically cooked on a vertical spit called a trompo, a technique inspired by Lebanese immigrants who brought shawarma-style cooking to Mexico.
 
This dish represents the red colour of the Mexican flag and also  the fusion that defines Mexican cuisine: Indigenous ingredients, Spanish influences, and Middle Eastern techniques blending into something uniquely Mexican.
 
The combination of red chiles, golden pineapple, and the deep orange of achiote gives the dish its signature color and aroma.
